1. Marinate your vegetables with olive oil and heavy herbs (like rosemary, thyme and oregano).
2. Grill the goodness.
3. Now here’s the secret. Take your veggies – and the occasional pineapple or peach – off the grill and splash it all with a bit of white wine vinegar.
